My homemade Guacamole!

imageMy boys have always cooked. Since they were tiny I have enrolled them in creating and making meals. True, I force them to fold washing and other mundane household chores but cooking is one that we all love.

 
The other night I had to attend a team meeting in town and left all the ingredients to make guacamole next to the Thermomix for my boys. I was expecting one of my older boys (Wil, 15 or Nelson, 13) to make the guacamole but both had homework so they instructed Quin (10) on how to make it, from a distance.
 
The amusing thing is that Quin read the recipe and decided that “2 cloves of garlic” meant “2 whole garlics” and proceeded to throw two entire, unpeeled garlics in with all the other ingredients and blend!
 
After blending, he opened the lid and complained to the boys that there was lots of garlic skin in the mix. When the older boys came over it didn’t take them long to realise that ample ‘garlic skin’ equals ample garlic. They coughed, gagged and laughed, chose to empty out half the contents into the dogs bowl, add two more avocados and try again. All was well but indeed an amusing family story none the less.
 
Today I am going to share my recipe for an organic Guacamole – not Quin’s version! 😉

Ingredients:

Please use certified organic wherever possible.
2 Avocados, halved, pitted, and removed from peel
½ tsp of Sea Salt (more if you wish)
¼ tsp of Pepper
1/4 tsp of Ground Chilli
1/2 cup of Fresh Tomatoes, diced
1 tbspn of Lime Juice (squeezed from fresh lime)
1 tbspn of Lemon Juice (squeezed from fresh lemon)
1/2-1 tsp of Fresh Crushed Garlic(depending on your taste buds)
1/2 tbsp of Red Onion (optional)
 

Method:

1. Combine all ingredients and mash with fork.
 
2. Serve immediately and enjoy!
