Friends shared this recipe with us recently and it makes for a great dairy-free desert. Mind-you, you do need to like bananas!
Dairy-Free Banana Ice-Cream
(you may like to add berries or chocolate to the mixture)
6 frozen bananas
1 tablespoon roasted wattle seeds
1 tablespoon honey
Try adding 250ml (1 cup) frozen blueberries or you could substitute blueberries for chocolate such as 2 tablespoons of chocolate mint leaves
Place frozen bananas into a food processor and blend until a creamy pulp. Whisk for 30 seconds to add air.
Gently fold wattle seeds and honey into whisked banana pulp, and return mixture to freezer for approximately 1 hour.
For less of a “banana flavour” add in blueberries or chocolate (chocolate mint leaves are delicious)
Serve 2 scoops of ice cream, and garnish with whatever takes your fancy.
Makes 4 serves.
